Chicken & Dumplings

On Tuesday, I switched it up a bit and made chicken & dumplings for our dinner date night.

I lightened this dish up by using only a splash of cream, half the dumplings (which was still A LOT), and no butter. It was still a very filling dish. Next time I would add double the veggies though & probably halve the entire recipe as it makes a very large amount! This dish was delicious, but I am thankful I could send Matt home with a lot of the leftovers ;-)–bikini season IS right around the corner!

Added in the cut-up (already cooked) chicken breasts….

I know this picture looks disgusting…but the dumplings were cooking on top…it was actually very tasty!
