I absolutely LOVE cooking in my new kitchen, but like any lady, I absolutely LOVE any gadget that cuts down on the time and effort of cooking a delicious meal! My Instant Pot is definitely my favorite gadget of 2018, and I have been making 2-3 meals per week in it since I got it for Christmas! It not only makes the best and easiest-to-peel hard boiled eggs (which I will remember for my parent’s Xmas Eve Party this year since my Mom makes the best deviled eggs), it also makes soups/stews that taste like they have been simmering all day, in under 30 minutes! It’s nice to throw all of the ingredients into the Instant Pot, push start, and then not have to worry about it until it’s finished! After a long day of work and a post-work Orange Theory Class, 30-minute meals are all I have in me, so I have been really depending on my Instant Pot for flavor and efficiency.
I’m on a low-sodium diet for health reasons, and I have found that cooking in my I.P. on high pressure mode best brings out the natural flavoring in fresh veggies and organic meats–and adding in dried or fresh herbs also really helps to create a full-bodied meal. I cook with a lot of pepper, basil, oregano, and chili powder/garlic powder for flavor, omitting salt in all recipes. Paprika and Turmeric are new spices that I’m really getting into cooking with as well! My spice drawer has definitely grown since I went low-sodium nearly ten years ago! The Instant Pot makes such a difference in bringing out the flavors of these spices, and in a quick amount of time!
I thought I would share a few great recipes that passed the husband test in the last few weeks, in the event you need a little motivation to take your Instant Pot out of the box!! I swear that it will make a huge difference in your dinner hour.
I am looking forward to a weekend full of workout classes (Orange Theory today, a spin class on Saturday, and BBG/Run on Sunday) leading up to a Super Bowl Party at our friends Todd & Michelle’s house on Sunday! Last night, I made this veggie filled and super healthy Instant Pot Vegan Cabbage Detox Soup. While it wasn’t the most hearty dish, it certainly was flavorful, and if you have over-indulged recently, it would be a great soup to add in for a light lunch!:
This healthy hamburger soup was one of my absolute favorite dishes I have made recently! It was so flavorful yet healthy. My household scarfed this down, and it was even better for lunch the next day–it makes quite a bit of leftovers! We used ground beef but you can also use venison or ground turkey breast if you prefer. The potatoes made it filling and I definitely didn’t feel denied eating this healthy meal. This is a 30-minute meal and gets even better on Day 2!
This is another meal that I absolutely loved recently and only took 30 minutes from start to finish! I have not cooked with turmeric or ginger very often, and this dish called for it. I will definitely be searching for more recipes with turmeric in them, given the many incredible health benefits of turmeric. We used raisins instead of cherries–but the sweetness of the fruit against the quinoa and chicken is perfection!
This was another 30-minute post-work meal that I made recently, and it was an absolute 10 out of 10! I am extremely fond of lentil soup, and adding in the spinach was a great way to get even more greens into my body–a struggle for most people! This was another one of those meals that the Instant Pot does so perfectly–pulling together all of the flavors in 30 minutes, as though it had been cooking all afternoon. This also made for delicious lunches the next few days!
